ABOUT OUR CHEF
In 1993, at the age of 16, Chef Bhupender Singh entered the culinary world. As a young teenager, he had became fascinated with his native Indian cuisine as a result of working with and learning from his uncle, R.K. Verma, an acclaimed chef.

He received intensive formative training during a 3-year apprenticeship that combined 3 days of classroom instruction with 3 days of on-the-job training weekly. After receiving his culinary diploma in India, he studied for and received his master’s degree in the United Kingdom.

He held his first chef’s position at the Maurya Sheraton Hotel and Towers in New Delhi, where, in 1999, he opened the Westview Grill Kitchen. This unique establishment allowed patrons to select their ingredients and observe the cooking process from beginning to end.

Later in 1999, Chef Singh moved to the United States to join Carnival Cruise Lines, but really longed to be in California. So, in 2000, he made the move to Mountainview, and was named Head Chef at San Francisco’s acclaimed Amber Restaurant.

In 2006, Chef Singh, serving as Vice President and Executive Chef, opened Saffron, a unique Orange County establishment that serves high quality, quickly prepared Indian food. He hopes to one day expand Saffron, making fast, fresh Indian food widely available.

Chef Singh has studied with many chefs of note including Madhu Wadhwani, Madan Lal Jaswal, Gev Desai, M. Imitiaz Qureshi and Mohammad Naseem.

Chef Singh is very excited about his decision to open Ambrosia India Bistro here in Monterey. He has two important goals at the restaurant: to create flavorful, memorable meals and to provide his patrons a wonderful dining experience. He sites his uncle, R.K. Verma, as his inspiration.
